Smoothie Summer

Ever since I gave up on being a crunchy mom, my blender has seen little use. But this summer, with temperatures higher than usual and tempers higher than normal since the kids are stuck inside and away from the community pool, I’ve pulled it out once more to make smoothies.

The cool treat is great for meals that don’t use the oven and create a nice cool down for the kids. Plus, as an added benefit while they think they’re drinking ice cream, they’re actually getting a good dose of fruits and vegetables.

Here are a couple of our favorite recipes from this summer, but don’t be afraid to mix up your favorite fruits and mix-ins. You might just create your family’s new go-to!

Tropical Jungle Smoothie

This green smoothie is healthy and delicious. I have boys that love the color green, so green things are easier to get them to drink (as long as they don’t know that there is spinach in there¬†ūüėČ)

INGREDIENTS

1 cup pineapple juice

1 can frozen pineapple chunks (I like to freeze these in tupperware containers to make it easier for me to add in later)

1  ripe avocado peeled and pitted

2 cups raw spinach 

DIRECTIONS

  1. Combine ingredients in blender in the order listed.
  2. Blend until smooth.
  3. Pour into glasses and enjoy!

 

My Cabbages! Smoothie

Yes, I named this one after a line in the cartoon Avatar: The Last Airbender. My 9 year old caught me putting cabbage into the blender and this was my first response. It got rid of his yuck face and made him want to drink it just because of Avatar. Now every time they drink this shouts of “My cabbages!” fill our halls. The purple color and cartoon reference makes them forget that this is healthy for them.

INGREDIENTS

1 cup pineapple juice

1 cup greek yogurt

2 cups shredded red cabbage

1 cups sliced frozen strawberries, raspberries, or blueberries (or a mixture!)

1 frozen ripe banana

1 tbsp chia seeds (optional)

DIRECTIONS

  1. Combine ingredients in blender in the order listed.
  2. Blend until smooth.
  3. Pour into glasses and enjoy!
